Get In Bar / Restaurant Mandria Paphos
Position : Head Chef / Kitchen Controller
Having relocated to Mandria, Paphos in I set up home with my wife. Whilst living in the
village I noticed there was a niche in the Market for an experienced chef who could cater for the
English but also the Cypriot appetites.
Having run kitchens throughout my career decided to negotiate with the owner of a local
bar/restaurant and decided to rent their kitchen space from them . I designed and prepared my own
menus varying from Indian Cuisine, Continental & local Dishes to English Roast Dinners. The
Bar immediately profited from my venture and became one of the most popular venues in the
area.
Due to the economical decline in the area, trade wasn’t as fruitful as it has been and I am seeking
a new challenge with a company which will benefit hugely from the wealth of experience I have
attained over the last years.
Stena Britannica
Position : Chief Cook
I was head hunted from the Ministry of Agriculture Fisheries & Food MAFF to work for Stena
Line on the Roll On Roll Off Stena Line Vessel. I was responsible for the day to day running of
the Ships Kitchen, catering for both personnel and members of the public.
My average day involved prepared breakfast, lunch & evening meal for the Passengers &
Crew per day which I ran between myself, x Kitchen Porter and x Stewards.
I prepared and designed the menus, ordered and maintained stock / food levels. I was also
responsible for signing off my staffs timesheets and had ultimate responsibility or all aspects of
the kitchen area
MAFF Ministry of Agriculture Fisheries & Food
Position : Cook / Chief Cook
When my Rig Contract Terminated at Santa Fe, I was approached by MAFF to work as the Ships
Cook. I worked hard and was soon recognised for my abilities and seeing my flair and aptitude for
the role I was soon promoted up to Chief Cook .
I was responsible for the taking control of the kitchen, preparing and organising meals along with
the day to day running of the accommodation facilities. I was also tasked with managing all
aspects of the Scientist off time whilst on the vessel.
Due to the nature of the role, I was responsible or up to Scientists/Crew and at times found
ourselves anchored for days on end whilst the scientist conducted their research. So had to ensure
that we had enough supplies to see us through the time we had at sea.
Universal Ogden Rigging Contractors
Position : Camp Boss
During this time I was employed as Camp Boss where I was responsible for all hotel services off
shore. I provided the staff to prepare the meals, accommodation and day to day living whilst on
my vessel. No one could go on and off the vessel without my knowledge.
I prepared all meals, menus, responsible and accountable for all costings relating to he kitchen
area and prepared all accounts to my superiors on how much meals and materials cost the
company.
I was deployed to Nigeria for a short term assignment to an off shore drill ship where I took
control of the Kitchen and hotel management ensuring food beverages, accommodation, safety
was provided at the high standards laid down by the company.
